Allergens, not a note
Eggs, milk, peanuts, tree nuts, wheat, fish, sesame, soy… The official list, ticked on every dish, visible on every order. Fish needs its name, tree nuts their source. An allergy is not a preference, and the two do not belong in the same box.
The menu changes every week
A dish is not a permanent product: it is offered Monday to Thursday, then it is gone. You build next week’s menu while this week’s is still selling.
The cut-off to order
“Order by Tuesday noon for Thursday.” Without it you accept an order you cannot make — and you are the one calling the customer to apologise.
What your kitchen can put out
Forty servings, not four hundred. And careful: a family size for four eats four. You count servings, never orders — otherwise you accept four times the work.
Picked up or delivered
The day’s list of what must go out, in the order it was promised. Ready for pickup, out for delivery, handed over. Plus the state nobody plans for: the meal the customer never came to collect.
The counter too
A soup and a dessert paid on the way out: the till, the taxes and the receipt. Your menu arrives already built — you rename what is not yours.
